500g pumpkin chunks, boiled
2 tbsp tamarind pulp
1 tbsp mustard oil
2 tsp red chilli powder
5 tbsp jaggery powder
Juice of 1 lemon
Salt to taste
In a blender grind the boiled pumpkin, raisins and tamarind pulp till smooth.
In a pan over low heat, heat the mustard oil.
Add the pumpkin-tamarind - raisin mixture, stir, reduce the heat, and bring to a gentle simmer. Add in the jaggery until it dissolves completely along with red chilli powder. Remove the pan from the heat. Add the lemon juice and mix well .
Season to taste with salt before serving.
