What Is It? Egyptians known to be ardent meat and fish lover have one particular specialty dish that is purely vegetarian and is one of the most popular foods available in roadside eateries and food stalls in Egypt. Called Kushari, this dish is a combination of pasta, rice, and lentil with a spicy topping of tomato sauce and crispy fried onions. It is often served with a spoonful of cooked chickpeas on top and for those who cannot have their meals without a hint of meat, then stir in cooked chunks of chicken or lamb.
Also Try Apart from the all-time favourite Kushari, the other delicacies that Kusharina specialises in are Tamiya, the popular snack which is similar to falafel.
Other favourites include authentic Egyptian Fatta with chicken and potatoes, roast lamb and veggies, Mouloukhiya, a stew cooked with chicken or lamb chunks and flavoured with coriander and garlic, and Egyptian style pasta and chicken.
Don’t miss the signature dish, Karkade. It is hibiscus tea made of dried red hibiscus flowers which is boiled in water and later sugar is added. The unique feature of this drink is that you can have it both hot and cold. Along with freshly made homemade dips and pickles another speciality at Kusharina is stuffed zucchini called ma7shi. Makroona bel bashameel or Macaroni Bechamel is ground meat mixture between two layers of macaroni smothered in a creamy béchamel sauce.
Don’t miss plateful of Baladi or vegetable salad, Dolma that is stuffed vine leaves, and Umm ali, the most sought-after dessert.
