Forget your sweet tooth and warm yourself up this week with some savoury pies that make great comfort food for lunch and dinner.
SHEPHERD’S PIE
Shepherd’s Pie is a traditional Irish dish made with ground lamb, vegetables and topped with a mashed potato crust. An absolute delight.
Ingredients
• 450g beef mince
• 1/2 cup medium onion chopped
• 2 garlic cloves crushed or minced
• 3/4 cup tomato paste
• 1/4 cup Worcestershire sauce
• 1 1/2 cups beef broth (from beef cubes)
• 3 cups frozen mixed vegetables (carrots, peas and green beans)
• 400g potatoes peeled and boiled
• 1/4 cup sour cream
• 1/4 cup milk
• Salt and pepper as per taste
Preparation
• Preheat your oven to 177°C.
• Heat a skillet over medium heat.
• Add ground beef, onion, garlic, and a pinch of salt and pepper to the skillet and cook, until it is browned.
• Stir in the tomato paste, Worcestershire sauce, and beef broth. Add vegetables and cook for 10-15 minutes.
• In a separate bowl, add the boiled potatoes and add sour cream, milk, and 1 teaspoon salt to the potatoes.
• With potato masher or hand mixer, mash to desired consistency.
• Add the meat vegetables mixture to a greased baking dish, then top with the mashed potatoes.
• Bake for 30-35 minutes till potatoes are slightly browned.

PENNE PASTA PIE
Novel to look at and palate comforting, this lovely pie comes together without much fuss!
Ingredients
• 500g penne pasta
• 4 cups readymade pasta sauce
• 1/2 cups mozzarella cheese, grated
• 1 /2 cup Parmesan cheese, grated
• 2 eggs lightly beaten
• 1 cup fresh parsley, roughly chopped
Preparation
• Cook the penne pasta as per packet instructions. Keep aside.
• Preheat oven to 160°C. In a pan, combine cooked pasta along with the pasta sauce and gently heat for about 2 minutes.
• Remove from heat and stir in mozzarella cheese, Parmesan cheese, eggs and parsley until well combined.
• Pour into the greased baking dish and smooth top with a spoon.
• Bake for 20 minutes till the cheese melts and the pie sets well and is golden in colour.

BROWN RICE AND TUNA PIE
Whip up this healthy and delicious brown rice and tuna pie for a one pot meal that will leave your family asking for more.
Ingredients
• 2 tablespoons butter
• 1 small onion, diced fine
• 2 cups cooked brown rice
• 1/4 teaspoon mixed, dried Italian herbs for the filling
• 2 cans of tuna (drained)
• 2 small garlic, minced/crushed
• 1 tablespoon tomato ketchup
• 3 large eggs, beaten
• 1 cup milk
• 1/4 teaspoon fresh parsley
• Salt and pepper as per taste
Preparation
• Melt butter and sauté onion till light pink. Now add rice, combine well and season with herbs.
• Add this rice mix to a greased pie baking plate.
• Spread tuna evenly over the rice.
• Combine remaining ingredients, garlic, ketchup, eggs, milk, parsley, salt and pepper, pour over tuna.
• Bake 177°C oven for 50-55 minutes.
• Serve hot with garlic bread
and a salad.

VEGETABLE PIE
Loaded with the hearty goodness of vegetables, this easy cheesy vegetable pie is a must try by one and all.
Ingredients
• 2 cups chopped broccoli
• 2 tablespoons olive oil
• 1/3 cup chopped onion
• 2 tablespoons crushed garlic
• 1/3 cup red and yellow bell pepper-finely chopped
• 2 eggs
• 1 cup milk
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
• 1 cup shredded Cheddar cheese
Preparation
• Heat oven to 200º C. Grease round pie plate.
• Steam broccoli till tender.
• Heat olive oil and sauté onion till translucent. Add the garlic and sauté till rawness disappears.
• Stir in the steamed broccoli, bell peppers and combine well with onion and garlic. Sauté well.
• Now add the eggs, milk, salt, pepper and cheese stir well, switch off the flame and pour the mix into pie plate.
• Bake 35 to 45 minutes or until golden brown and knife inserted in centre comes out clean. Cool for 5 minutes.
